Vineyard & winemaking
100% Cabernet Franc hand-harvested in 25 kg baskets in Luján de Cuyo, Mendoza, at 900 m.a.s.l. Grapes are selected and destemmed, then given a very brief pre-fermentation maceration in the pneumatic press to extract color and aromatic precursors. The free-run juice is gently pressed off and fermented like a white wine in stainless steel tanks for 12 days below 13 °C, with no malolactic fermentation and no contact with wood. The blend is assembled, then gently stabilized and filtered before bottling.
